Watermelon, Feta, and Arugula Salad with Citrus Vinaigrette


Ingredients

  • 1/4 cup freshly squeezed lemon juice

  • 2 tablespoons fresh orange juice

  • 1/4 cup white balsamic vinegar

  • 2 tablespoons Dijon mustard

  • 1 tablespoon honey

  • 2 teaspoons P.S. Flavor!™ Citrus Spice

  • 1/2 teaspoon P.S. Flavor!™ Creole Kitchen

  • 2 tablespoons extra virgin olive oil

  • 3 cups cubed (1/2 to 3/4 inch) seeded watermelon, drained (from a 2 1/2-lb piece, rind discarded)

  • 1/2 small red onion, thinly sliced

  • 6 cups baby arugula (3 oz) - may substitute baby spinach leaves

  • 1/4 cup dry roasted unsalted pistachios, pine nuts, or sliced almonds

  • 1/2 cup crumbled feta cheese

  • Coarsely ground black pepper, to taste

Method

  1. Whisk together lemon juice, orange juice, vinegar, Dijon mustard, Citrus Spice, and Creole Kitchen in a large bowl, then add oil in a slow stream.

  2. When ready to serve, toss drained watermelon, red onion, arugula, and toasted nuts with vinaigrette; then sprinkle with feta and cracked black pepper.
