Mushroom White Pizza

Mushroom White Pizza


Ingredients

  • 1 pound mushrooms (such as crimini, portabellas, shiitake, buttons), sliced

  • 2 tablespoons extra virgin olive oil, divided

  • 1 teaspoon P.S.Flavor!™ Creole Kitchen, divided

  • 4 ounces homemade or store-bought pizza dough, at room temperature

  • 2 cloves garlic, finely minced

  • 1/2 cup part-skim milk ricotta

  • 2 ounces (1/2 cup) shredded low-moisture mozzarella

  • 2 ounces (1/2 cup) shredded parmesan

  • 1/4 cup chopped fresh parsley

  • 1/4 cup basil, chiffonade

  • 1/4 teaspoon red pepper flakes


Method

  1. Preheat oven to 500º F with rack in lowest position. Place large sheet pan in oven to heat as oven does.

  2. Meanwhile, toss mushrooms with ½ tablespoon olive oil and 1/2 teaspoon Creole seasoning and spread out onto the hot sheet pan and roast, stirring occasionally, until golden, about 12 minutes.

  3. On a large pizza paddle or baking sheet pan, stretch out dough to a 9 to 10-inch circle. Mix remaining oil with minced garlic and spread onto dough. Sprinkle with 1/4 cup shredded parmesan.

  4. Stir together ricotta, mozzarella, parsley. and remaining Creole seasoning in a medium bowl. Dollop small amounts over dough, leaving a 1-inch border. Arrange roasted mushrooms on top, and top with remaining 1/4 cup parmesan.

  5. Bake until golden, about 5 minutes. Time can vary based on thickness of dough. Sprinkle with basil and red pepper flakes. Cut into slices and serve.
