BIRCHER MUESLI

This is a perfect breakfast to start your day -- strong and energized!

2 cups old fashioned oats
1/2 cup dried cranberries or blueberries (or a combination)
1 cup skim or soy milk
2 cups fresh orange juice
2 cups of vanilla or plain Greek yogurt
1/2 cup chopped pecans or sliced almonds
1 tsp. vanilla
1 tablespoon honey, if desired

Combine all ingredients. Cover and refrigerate overnight. Serves 8. When ready to serve, sprinkle with flaxseed and add fresh fruit, such as:

1 cup diced apple (Fuji or granny smith)
1 banana, sliced
1 cup blueberries or strawberries
